  • 150g sirloin steak, cut in half
  • 100g fresh breadcrumbs
  • 2 tbsp parsley, chopped
  • 100g plain flour
  • 2 eggs, beaten
  • 2 tbsp olive oil

Method

First

Place the steak in a plastic bag or sandwich bag, and flatten with a rolling pin until a couple of centimetres thick. Season well with salt and pepper.

Second

Put your pan on a moderate heat. Mix together the breadcrumbs and the parsley, and put in a wide bowl. Set out another plate covered in flour, and another wide bowl with the beaten egg. Dip the flattened steaks into the flour, then into the egg, and finally coat with the breadcrumbs. Once covered, fry in the pan for 2 minutes on each side, or until golden and crispy. Serve with a big pile of fries and some leafy greens.
