Method

First

Put all of your ingredients into your slow cooker in the morning, along with 4 tbsp of barbecue sauce. Cover the whole lot with water (about 1.5 litres), and then slow cook on a medium setting for about 8 or 9 hours - you want the meat very tender but not quite falling off the bone.

Second

Heat your oven to 220C, and line a roasting tray with foil. Carefully, with a slotted spoon, remove the ribs from the slow cooker, and place them on the tray. Baste well with the remaining barbecue sauce, and then roast them for about 30 minutes or until crisp and sticky and delicious. Serve with your preferred green vegetables, or with your favourite barbecue side dishes.
