Quick Quiche Lorraine Recipe

What you'll need: * 500g of ready made shortcrust pastry [http://www.bbcgoodfood.com/recipes/2983/basic-shortcrust-pastry] * 85g medium cheddar [http://www.cheese.com/cheddar/] or gruyere [http://www.cheese.com/gruyere/] cheese * 3 eggs, beaten * 250ml double cream * A pinch of nutmeg * 200g smoked bacon, chopped -------------------------------------------------------------------------------- Method

First

Line a baking tin with the pastry - make sure it’s evenly rolled to about 1cm thickness. Trim the excess hanging over the edge, and press down the base to make sure there’s no air pockets. Chill in the fridge for 30 minutes, covered in cling film.

Second

Blind bake your pastry case - you do this by lining the tin with baking paper, and filling with baking beans or similar. Bake in an oven at 200C for 15 minutes, until the pastry has set. At this point, remove from the oven, lift out the paper and beans and discard them, and bake the pastry for another 5 minutes until it is golden.

Lastly

Fry the bacon in a pan until golden, and then put it into the pastry case. Grate the cheese, and add that, too. Mix the eggs, nutmeg and cream together, and pour over the bacon and cheese, filling the pastry case. Bake for 30-35 minutes, until the quiche is set, and allow to cool before serving. A French picnic classic!
