Quick Lamb Tagine Recipe

What you'll need: * 350g diced lamb * 400g can of prunes * 400g can of chopped tomatoes * 2 tbsp olive oil * 2 tsp Ras el Hanout [http://www.epicurious.com/recipes/food/views/ras-el-hanout-101070] or Moroccan spice mix * 400 ml boiling water * 250g couscous [http://www.bbcgoodfood.com/glossary/couscous]

What you'll need:

  • 350g diced lamb
  • 400g can of prunes
  • 400g can of chopped tomatoes
  • 2 tbsp olive oil
  • 2 tsp Ras el Hanout or Moroccan spice mix
  • 400 ml boiling water
  • 250g couscous
  • Rind and juice of a lemon
  • 1 tbsp chopped mint

Method

First

Heat a tbsp of oil in a large pan, and stir fry your lamb for about three minutes. After this, add the spice mix, and fry for one minute more.

Second

Add the tomatoes, bring to a boil and then simmer for fifteen minutes, until the meat has softened. At this point, add the prunes and simmer for a further five minutes.

Third

Meanwhile, make the couscous by putting it into a large, heatproof bowl along with the boiling water, a pinch of salt and a tbsp of oil. Cover the bowl with some cling film, and leave for five minutes.

Lastly

When ready, fluff the couscous with a fork, add the lemon rind, juice and mint, and serve hot with the lamb.
