What you'll need
- 3 tbsp olive oil
- 2 aubergines, halved lengthways
- 4 tomatoes
- Handful of basil leaves
- 150g blue cheese or strong cheddar
Time: 30 mins
Preheat your oven to 200C. Drizzle some oil over your aubergine halves, season well with salt and pepper, and roast in the oven for 25 minutes until softened.
While your aubergines are cooking, slice the tomatoes and cheese. Remove the aubergines after 25 minutes, place the tomatoes, cheese, and basil leaves on the cut side, and stick back in the heat for 5 more minutes. Serve hot with couscous and share with your mates.
