What you'll need:

  • 100g green lentils
  • 1 garlic clove, crushed
  • ½ lemon, juice only
  • 2 tbsp extra virgin olive oil
  • 20g torn fresh basil
  • 75g creamy goats’ cheese
  • Salt and pepper

Time: 30 mins

Serves: 2


Method

First

Take a small saucepan, and tip in your lentils. Cover with water (you want to cover with about 6 cm of water, ideally), and add the garlic. Bring up to the boil, the down to a simmer for 20 minutes.


Second

Drain your lentils and empty into a bowl. Stir in a good squeeze of lemon juice, as well as most of the torn basil leaves. Season well with salt and freshly ground black pepper.

Third

Crumble your goats’ cheese all over the lentils, add the rest of the basil, and serve up this simple, delicious vegetarian treat.
