What you'll need:
- 1 small onion, diced
- 2 crushed garlic cloves
- 250g beef mince
- 2 tbsp tomato puree
- 2 tsp turmeric
- 1 potato, cut into small cubes
- 2 tbsp hot pepper sauce
- A few sprigs of thyme
- 500g block of readymade shortcrust pastry
- 1 beaten egg
Time: 1 hour
Soften the onion in some oil in a pan for 5 minutes or so. Add the beef mince and the garlic, turn up the heat and cook until well browned. Chuck in the puree, the thyme, half the turmeric and about 200ml of water, simmer covered for 15 minutes, then remove the lid and cook for a further 5 minutes. Stir in the hot pepper sauce, and leave to cool.
While the beef is cooking, pre-heat your oven to 220C. Roll out your pastry until it’s about 2cm thick, and cut into six 15cm circles using a side plate as a guide.
Divide the meat mixture between the six circles of pastry, and make sure it’s piled up on one side. Mix together the egg with the turmeric, and brush the mixture around the edges of the pastry before folding over and sealing with a fork. Place onto a baking tray lined with parchment, and bake for 25 minutes. Serve hot, with a green salad on the side.
