Greek Lamb Salad Recipe

What you'll need: * ½ tsp oregano * 1 tbsp quality olive oil * The juice of ½ lemon * 4 x lean lamb steaks * 3 big tomatoes, cut into chunks * ½ cucumber, cut into small chunks * 50g pitted black olives * 75g feta, crumbled * A small bunch of mint leaves Serves: 4 Time: 15 minutes

What you'll need:

  • 4 x lean lamb steaks
  • 3 big tomatoes, cut into chunks
  • ½ cucumber, cut into small chunks
  • 50g pitted black olives
  • 75g feta, crumbled

Time: 15 minutes

Method

First

In a large bowl, mix together the olive oil, lemon juice and some sea salt and black pepper. Remove a tablespoon of the dressing and put in a separate small bowl, and then toss the lamb steaks in the mixture to marinade for 10 minutes.

Second

Heat a griddle pan or barbecue, and cook the lamb steaks for 5 minutes each side. Once cooked, leave to rest for 5 minutes, then cut into slices.

Third

While waiting for the lamb to rest, put the tomatoes, cucumber, olives and remaining dressing together in a salad bowl, and toss lightly. Serve on a plate, topped with the crumbled feta, and then add the sliced lamb steaks and top with a scattering of mint.
