  • 4 tsp grapeseed oil
  • 2 big red onions, finely sliced
  • 8 large eggs
  • 4 tsp clear honey
  • 140g goats cheese

Time: 20 minutes

Method

First

Start things off by putting your grill on a high heat. Meanwhile, in a large non-stick frying pan, add the oil and the sliced onions, and sweat them down with the lid on for 10 minutes on a low-medium heat. Put the heat on low, then stir in the honey and cook for a further minute or so.

Second

Crack the eggs into a bowl, beat well and add black pepper and sea salt. Pour the eggs into the pan over the onions, cook on a medium heat for five or six minutes or until almost set. Break up the goats cheese, and scatter over the top of the egg before sticking the pan under the grill.

Third

Grill your frittata for 3 minutes or until the cheese is melted and bubbling. Give the pan a shake to check the egg is set - if so, tip it out, and serve hot with a green salad and some beetroot.
