Easy Turkey and Peanut Curry

  • 1 tbsp oil
  • 1 sliced onion
  • 10cm piece of ginger, grated
  • 3 crushed garlic cloves
  • 300g shredded roast turkey
  • 2 tsp each ground cumin and coriander
  • 1 tsp chilli powder
  • ½ tsp turmeric
  • 400ml coconut milk
  • 1 tbsp tomato puree
  • 400g tin of chickpeas
  • 1 tbsp peanut butter
  • Chopped coriander, to serve
  • Cook the onion in the oil for a few mins to soften, then season and stir in the ginger and garlic. Cook for 3 mins, then add the turkey, spices and tomato puree, and cook for 3 mins more.
  • Pour the chickpeas (with the liquid) and the coconut milk into the turkey mixture. Stir in the peanut butter, and simmer for 10 mins to thicken the sauce and infuse the flavours. Scatter with chopped coriander, and serve with rice or naan.
