What you'll need:

  • 1 tbsp soy sauce
  • 2 tbsp olive oil
  • 1 tbsp sesame seeds
  • 1 tbsp clear honey
  • 50g grated coconut
  • 3 tomatoes, chopped
  • 1 tbsp fresh parsley
  • 1 chilli, seeds removed, chopped
  • 2 spring onions, chopped
  • 100g rice noodles, soaked in hot water until softened, drained
  • 50g salmon fillet, poached and skinned
Time: 20 minutes
Serves: 1



Take a bowl, and throw in all of the ingredients except for the noodles and the salmon. Mix well to create your fresh dressing.


Pour your dressing all over your drained rice noodles, and mix together to ensure every noodles is coated with the flavour. Place the noodles in a serving bowl, top with the poached salmon fillet, and drizzle with a little extra soy sauce. Easy!
