What you'll need:

  • 2 large eggs, beaten in a bowl
  • Small handful of sage leaves, finely chopped
  • 140g dried breadcrumbs
  • 8 boneless pork chops, trimmed of fat
  • 4 tbsp melted butter
Serves: 8
Time: 20 minutes

Method

First

First of all, get your grill nice and hot and prepare your dish of melted butter.

Second

Get a big plate out of your cupboard, and tip the sage leaves and breadcrumbs onto it before mixing them together with plenty of seasoning. Onto another plate, pour the beaten eggs. Take your pork chops and pat them dry, then coat in the beaten egg and cover in breadcrumbs.

Third

Place the breaded chops on a baking sheet, and brush all over with melted butter. Cook under the hot grill for 8 minutes or until golden and crispy, then flip over, brush with more butter, and grill for another 8 minutes. Serve with greens and a slice of lemon.
