  • 2 medium pork fillets
  • 50ml soy sauce
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 2 crushed garlic cloves
  • 1 sliced spring onion
  • 1 tsp grated ginger
  • ½ tsp cinnamon
  • Mix the soy sauce, sugar, honey, garlic, spring onion, ginger and cinnamon in a shallow ovenproof bowl and stir well to combine. Add the pork fillets and turn to coat all over, then leave to marinate in the fridge for 2 hours, turning occasionally.
  • Preheat the oven to 190C. Drain the pork fillets from the marinade (reserve the marinade) and place on a rack over a roasting tin. Cook for 20 mins in the oven or until cooked through and the juices run clear, basting with the marinade twice throughout the cooking time. Serve with steamed rice and stir-fried vegetables.
