Barramundi in Lemon Butter Recipe

What you'll need:

  • 2 Barramundi fillets (6-8 oz each)
  • 1 crushed garlic cloves
  • 2 tbsp butter
  • 2 tsp olive oil
  • Juice of half a lemon
  • Salt to taste
  • 5 fresh basil leaves, finely chopped
Serves: 2
Time: 15 minutes

Method

First

First, make your simple sauce. Gently heat a small saucepan, and saute the garlic in the butter until it just begins to turn golden. When this happens, stir in the lemon juice, about almost all of the basil (save a little bit for later). Add a pinch of salt, take off the heat, then leave to one side.

Second

Pat your fish fillets dry, and then generously coat either side with olive oil. Fry on a medium heat in a non-stick frying pan for 3 minutes on one side, and when the edges start to turn golden, flip the fillet over, and fry for a further two minutes.

Third

Place the cooked barramundi fillets on a plate, and spoon plenty of that lovely sauce over the top. Sprinkle with a little basil, and serve with your favourite green vegetables or a light salad.
