Baked Salmon with Parmesan and Spinach

  • 4 medium salmon steaks
  • 350ml cream
  • 150g baby spinach leaves
  • 2 crushed garlic cloves
  • 50g grated parmesan cheese
  • 4 peeled and chopped white potatoes
  • 4 tbsp milk
  • 2 tbsp butter
  • 1 tbsp wholegrain mustard
  • Preheat the oven to 180C. Place the washed spinach leaves on the bottom of a deep oven dish, and place the salmon steaks on top. Season liberally with salt and pepper. In a small jug, mix the garlic and cream with a pinch of salt and pour over the salmon, then sprinkle the lot with all the parmesan cheese.
  • Place the baking tray with the salmon in the oven and cook for 25-30 mins or until the cheese has melted and the salmon is cooked through and flaking. Meanwhile, boil the potatoes until tender, then drain and mix with the milk, mustard and butter. Mash until smooth, then serve alongside the salmon, spinach and sauce from the oven dish.
