Ingredients

Method

  • 100g sliced chorizo sausage
  • 1 chopped onion
  • 2 chopped celery stalks
  • 1 chopped green capsicum
  • 2 diced chicken breasts
  • 1 crushed garlic clove
  • 1 tbsp Cajun spice mix
  • 300g brown basmati rice
  • 400ml chicken stock
  • 400g tin of chopped tomatoes
  • Chopped coriander
  • Toss the chorizo into a large dry pan and cook until the oils start to be released. Add the celery and onion to the pan and cook for 4 mins to soften, then add the capsicum and chicken and cook until the chicken is browned all over.
  • Stir in the garlic and cook for 2 mins, then add the Cajun spice mix and stir until everything is coated. Add the rice and a pinch of salt, stir well, then add the stock and tomatoes. Simmer gently, covered, for about 25 mins or until the rice is tender and the chicken is cooked through. Serve with a scattering of coriander and enjoy.
