Sea Bass Italian One Pot Wonder Recipe

What you'll need:

  • 2 tbsp olive oil
  • 1 sliced fennel bulb
  • ½ red chilli, finely chopped
  • 2 sliced garlic cloves
  • Bunch of basil, roughly chopped and stalks removed and tied
  • 400g can of chopped tomatoes
  • 150ml white wine
  • 2 big handfuls of clams or mussels (or a mix of both!)
  • 250g squid, sliced
  • 8 big prawns
  • 4 sea bass fillets
Serves: 4
Time: 45 minutes

Method

First

Get a big, lidded saucepan out from your cupboard, and heat your olive oil over a moderate heat. Chuck in your fennel, chilli and garlic, and lightly fry until all are softened.

Second

Throw the squid, basil stalks, wine and tomatoes, and simmer on a low heat for about 30 minutes, to allow the sauce to thicken and the squid to become tender, and season well.

Third

Scatter the shellfish and prawns over the top, and lay the fillets over everything. Turn the heat up, stick the lid on the pot, and cook for a further 5 - 6 minutes. Serve with crusty bread and a big glass of wine.
