Scallop and Apple Salad

What you'll need: * 2 tbsp olive oil [http://www.bbcgoodfood.com/glossary/olive-oil] * 6 cleaned scallops [http://www.bbcgoodfood.com/glossary/scallop] * Juice of ½ lemon For the salad: * 1 fresh, sharp green apple * 2 handfuls of pea shoots or lamb’s lettuce * Some olive oil * Juice and zest

What you'll need:

For the salad:

  • 1 fresh, sharp green apple
  • 2 handfuls of pea shoots or lamb’s lettuce
  • Some olive oil
  • Juice and zest of ½ lemon
  • Salt and pepper

Method

First

Start with the salad. Peel and core your apple, then very thinly slice. Mix this with the leaves, the lemon juice and zest, and some seasoning.

Second

Heat up your frying pan until very hot, and add some olive oil. Fry your scallops for around 90 seconds on one side, and squeeze the lemon juice over the uncooked side. Flip them over and repeat the process.

Lastly

When the scallops are cooked, toss them in the salad with the cooking oil and lemon juice. Serve immediately for a fresh, delicious and exciting lunch.
