Sausage and Lentil One Pot Wonder Recipe

What you'll need: * 1 tbsp olive oil [https://www.bbcgoodfood.com/glossary/olive-oil] * 400g pack of top quality sausages * 1 crushed garlic clove [http://www.food.com/about/garlic-165] * 1 finely chopped white onion * 250g lentils [https://www.bbcgoodfood.com/glossary/lentils] (tinned are fine) * 1 sliced red

What you'll need:

  • 1 tbsp olive oil
  • 400g pack of top quality sausages
  • 1 crushed garlic clove
  • 1 finely chopped white onion
  • 250g lentils (tinned are fine)
  • 1 sliced red pepper
  • 125ml red wine
  • 150ml vegetable stock
Serves: 4
Time: 40 minutes

Method

First

Heat the oil in a large sized pan, and cook your sausages as you normally would until well browned. Remove them from the pan, and chuck in the remaining oil, the garlic, onion and red pepper in their place. Soften for about five minutes, before adding the lentils, sausages, stock and wine.

Second

Bring to a good boil, and then leave to simmer for about 20 minutes, adding seasoning to taste. Serve once the lentils have softened and cooked through, alongside plenty of crusty bread. Nice!

This will go brilliantly with wines that pack in plenty of flavour and tannin such as the Vina Ilusion Tempranillo 2015. Tempranillo likes hearty, rustic foods with loads of umami flavours so this two should be a winning combo!
