What you'll need:

  • 1 chopped onion
  • 1 chopped celery stick
  • 1 crushed garlic clove
  • 2 bell peppers, chopped
  • 6 good quality pork sausages
  • ½ tsp chilli flakes
  • ½ tsp cumin
  • 1 tsp smoked paprika
  • 250g fresh spinach leaves
  • 2 x 400g can chopped tomatoes
  • 400g can cannellini beans (or similar)

Time: 60 minutes

Method

First

Soften your onion, garlic, peppers and celery in a casserole dish with a splash of oil. Stir for about 10 minutes, until everything is golden and sweated down.

Second

Turn up the heat, and chuck your sausages into the mix. Allow to fry until they’re browned all over, and then turn the heat right down and stir in your spices. Pour all the tomatoes into the casserole, and simmer gently - covered - for about 40 minutes, stirring regularly.

Third

Take the lid off and add the spinach and beans, and stir everything through until the spinach has wilted and the beans are cooked. Serve hot, with some crusty bread.
