What you'll need:

  • 1 tbsp veg oil
  • 2 diced carrots
  • 2 sliced celery stalks
  • 2 chopped garlic cloves
  • 1 diced onion
  • 250 grams of good, smoked sausage chopped
  • A can of kidney beans and a can of cannellini beans
  • A can of chopped tomatoes
  • A sprig of thyme
  • 2 bay leaves

Method

First

Heat the oil in a large, heavy-based pan. Add the onion, garlic, celery and carrots, and cook for a couple of minutes until the onion has softened. Chuck in the sausage, and cook for a few more minutes until it has browned.

Second

Pour in the beans and tomatoes, and add the thyme, bay leaves and season with salt and pepper. Cover the pan and simmer for 10 minutes, until the vegetables have softened.

Lastly

Remove the thyme, and serve with crusty bread.
