Onigirazu Sushi Sandwich

  • 350g cooked sushi rice
  • 4 sushi nori sheets
  • 100g flaked hot-smoked salmon
  • 1 sliced avocado
  • 4 leaves of Romaine lettuce
  • Soy sauce, wasabi and pickled ginger
  • For the Cucumber
  • ½ cucumber, thinly sliced
  • 1 crushed garlic clove
  • ½ tsp chilli powder
  • ½ tsp sugar
  • 1.5 tsp rice vinegar
  • Combine the pickled cucumber ingredients in a bowl and refrigerate. Assemble the sandwich by laying a nori sheet (rough side up) on a sheet of film. Position about ¼ of the rice in the centre and shape into a square, with the flat sides of the square facing the corners of the nori sheet. Season. Place half the avocado, salmon, lettuce and a spoonful of cucumber on top of the rice, again, trying to make a square. Place another ¼ of the rice on top, and shape into a square once more. Season.
  • Wet your fingers and fold the corners of the nori sheet into the centre to make a sealed, square parcel. Gather the film around the parcel, and press down to seal and compact. Set aside for 5 mins, and repeat with the second sandwich. To serve, slice through the centre of the sandwiches with a sharp knife, then remove the film and serve with dipping sauce.
