Lamb Steaks with Pesto Sauce

  • 4 lamb leg steaks
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 400g cannellini beans, drained
  • 30g peppery leaves
  • 150g cherry tomatoes, halved
  • ½ red onion, sliced
  • 25g pine nuts
  • 30g basil
  • 1 crushed garlic clove
  • 2 tbsp olive oil
  • 15g grated parmesan
  • Heat a large pan and toast the pine nuts for 2 mins. Tip into a food processor withe the basil and garlic, then pulse as you gradually pour in 2 tbsp of olive oil. Transfer your pesto to a small bowl and stir in the parmesan and a splash of water.
  • Season the lamb steaks well and fry in 1 tbsp of olive oil for 3 mins on each side. Meanwhile, toss the cannellini beans with the leaves, tomatoes, red onion and lemon juice. Serve the lamb topped with plenty of pesto and the bean salad, drizzled with the pan juices - yum!
