Italian Crusted Fish Recipe

What you'll need:

  • 50g breadcrumbs
  • 25g grated Parmesan or similar
  • 2 tbsp finely chopped parsley
  • 50g butter
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 4 skinless white fish fillets (any good flakey white fish will do)
  • Salt and pepper
Serves: 4

Method

First

Preheat your grill, and then mix together in a bowl your breadcrumbs, cheese, parsley, lemon zest, and salt and pepper.

Second

Season your fish fillets well, and gently pan fry in some oil for two or three minutes on one side. Carefully flip them over, and sprinkle the crumb mixture on top of the fish. Keep the fillets in the pan, and brown the crust under the grill for two or three minutes. Remove, add the butter and the lemon juice to the pan, and spoon the melted mixture over your fillets and serve with salad.
