  • 2 tbsp balsamic vinegar
  • 3 tbsp quality olive oil
  • 50g soft goat’s cheese
  • 1 tbsp runny honey
  • 50g pomegranate seeds
Serves: 3
Time: 10 minutes

Method

First

Put the lettuce quarters in a bowl, season well with salt and pepper, and drizzle all over with a little olive oil. Put your griddle pan on a high heat, and griddle your lettuces for about a minute on each side - you want them to get a bit charred all over. Remove from the heat, and put to one side on a serving plate.

Second

Using the leftover olive oil to make a simple dressing - whisk it quickly with the balsamic vinegar and the honey, before drizzling all over the lettuce. Crumble the goat’s cheese on top of the salad, and then toss the pomegranate seeds all over. Simple, but utterly delicious!

This salad will go brilliantly with a Loire Valley Sauvignon Blanc such as the Domaine de Salvard 'Unique' Sauvignon Blanc 2016. This wine is going to be a real winner with some great salads!
