What you'll need: * 16 large, plump chicken wings * 125ml soy sauce [https://www.bbcgoodfood.com/glossary/soy-sauce] * 5 tbsp white wine vinegar [http://www.finecooking.com/ingredient/white-wine-vinegar] * 140g dark brown sugar To serve: * Half a cucumber, ribboned with a veg peeler * Sticky rice [https://www.tablespoon.com/

What you'll need:

To serve:

  • Half a cucumber, ribboned with a veg peeler
  • Sticky rice or egg fried rice
Serves: 4
Time: 40 minutes

Method

First

Before you begin, pre-heat your oven to 220C. Take a large roasting dish, and toss the wings in the soy sauce, 2 tbsp of the vinegar, 120g of the sugar and plenty of cracked black pepper. Roast well for 40 minutes or so, turning regularly to give them a nice nut-brown lacquer.

Second

While the chicken is roasting, bring the rest of the vinegar and sugar to boil. You can do this in a small saucepan, over a medium heat for about a minute or until the sugar is dissolved. Leave it to cool, and when serving, toss it over the cucumber ribbons and chicken wings. Serve with a scoop of sticky or egg fried rice, and enjoy!
