Crusted Cod with Lemon and Parsley Recipe

What you'll need: * A big, thick cod fillet [http://www.greatbritishchefs.com/how-to-cook/how-to-skin-a-fillet-of-cod] (675g or so) * 85g good white breadcrumbs * 2 cloves of garlic, crushed * 60g melted butter * 3 tbsp parsley [https://www.organicfacts.net/health-benefits/herbs-and-spices/health-benefits-of-parsley.html] , finely chopped * Zest of ½ lemon * Salt and pepper

What you'll need:

  • A big, thick cod fillet (675g or so)
  • 85g good white breadcrumbs
  • 2 cloves of garlic, crushed
  • 60g melted butter
  • 3 tbsp parsley, finely chopped
  • Zest of ½ lemon
  • Salt and pepper
  • Lemon wedges to serve

Method

First

Season the cod well with salt and pepper, and in a mixing bowl, mix together with your fingers all the breadcrumbs with the parsley, garlic, a good squeeze of lemon juice, lemon zest, salt, pepper and butter.

Second

Place your cod fillet in a shallow roasting dish, and cover completely with the breadcrumb mixture. Press down to make a thick crust. Bake in an oven at 220C for 20-25 minutes - the crust should be browned, and the fish should flake nicely. Serve with your choice of vegetables or a green salad.
