  • 400g your favourite sausages
  • 1 tbsp olive oil
  • 2 cloves of garlic, finely chopped
  • 1 onion, finely chopped
  • 400g can of chopped tomatoes
  • 1 tbsp tomato puree
  • 1 tsp chilli powder (as hot as you like)
  • 400g can of kidney beans
  • 4 large hot dog rolls
  • 140g cheddar, grated

Method

First

This is a fun, slightly dirty street food recipe, which starts with you getting your hands messy! You’ll need to remove the sausages from their skins, to break up the sausage meat into medium sized chunks. Heat the oil in a large pan, and add the onions and sausage meat. Fry until the onions have softened, and the meat is golden.

Second

Stir in the garlic, and fry for a further minute before adding the kidney beans, the tinned tomato, the puree, and the chilli powder. Bring up to the boil, and cook for 10 minutes to thicken well.

Third

Split your rolls down the middle, and toast them on the cut side either on a griddle pan, or under a hot grill. Spoon the mixture onto the rolls, and garnish with grated cheese. Serve with fries and whatever else you fancy.

This dish deserves to be paired with Cotes du Rhone blends such as the Pierre Amadieu Roulepierre Côtes du Rhône 2015. This wine will pair superbly with sausages. Yum! Happy cooking!
