Authentic Tagliatelle Bolognese Recipe

What you'll need: * 6 rashers of pancetta [http://www.bbcgoodfood.com/glossary/pancetta], chopped * 2 large onions, chopped * 3 crushed garlic cloves * 2 tbsp olive oil * 2 chopped carrots * A stick of celery, chopped * 1 kg minced beef * 2 cans of chopped tomatoes * 2 glasses of red wine

What you'll need:

  • 6 rashers of pancetta, chopped
  • 2 large onions, chopped
  • 3 crushed garlic cloves
  • 2 tbsp olive oil
  • 2 chopped carrots
  • A stick of celery, chopped
  • 1 kg minced beef
  • 2 cans of chopped tomatoes
  • 2 glasses of red wine
  • 2 bay leaves
  • 1 kg tagliatelle

Method

First

Fry the pancetta over a medium heat, until golden brown. Into the same pan, soften the onions and the garlic, before adding the mince. You’ll need to keep things moving, and brown the mince all over for a few minutes.

Second

Pour the wine into the pan, and boil it up until reduced by about half. Reduce the heat, and add the carrots and celery to the mixture, before stirring in all the tomatoes. Cover with a lid, and simmer for about an hour and a half, until it is thick and unctuous, and completely irresistible!

Third

Serve with al dente tagliatelle, which you have boiled in salted water. Sprinkle with parmesan, and voila! An authentic bolognese you can offer your Italian friends.
